Meal Mess

Here is the answer you have been looking for--recipes you can use to feed your family in a matter of minutes. These recipes are perfect for helping busy families make it through the week without sacrificing nutrition. Let's start with Tuna Melts. These melts are quick, inexpensive, and filling. Serve with some carrot sticks or baked chips. It is hard to find a quicker meal. The Ranch Beef Skillet Supper is table ready in a half hour and has meat, rice, veggies, and cheese all in the one skillet. Serve with a tossed salad and you have a complete meal in no time. And the best part about both of these meals is that you will have very little clean-up to mess with.
TUNA MELTS
8-oz jar pasteurized process cheese spread
1/4 cup mayonnaise
12 1/2-oz can tuna, drained and flaked
8-oz can sliced water chestnuts, drained and chopped
2 tbsp snipped dried chives
4 English muffins, split and toasted
Combine 1/2 cup of the process cheese spread and the mayonnaise. Stir in the tuna, water chestnuts, and chives. Spread the mixture on the English muffin halves. Place on the unheated rack of a broiler pan. Broil 4-inches from the heat about 3 minutes or until heated through. Top each with a dollop of the remaining cheese spread. Broil for 30 to 60 seconds more or until the cheese spread melts.
RANCH BEEF SKILLET SUPPER
1 lb lean ground beef
1 box (8-oz) seasoned rice & black beans
1 can (14.5-oz) diced tomatoes with green chilies
1 box (10-oz) frozen corn kernels
1/2 cup packed cilantro
1 cup (4-oz) shredded sharp Cheddar cheese
Cook beef in a large nonstick skillet over medium-high heat, breaking up clumps with a spoon. Cook about 4 minutes or until beef in no longer pink in the center. Stir in the rice and beans, tomatoes, corn, and 2 1/2 cups water. Bring mixture to a boil; reduce heat, cover and simmer 20 minutes or until the water has been absorbed. Meanwhile, chop the cilantro. When serving, sprinkle the cilantro and cheese over the top.

Do you recall the very first meal you prepared for your spouse and how the food turned out?
I fried pork chops and fried potatoes for my husband and me. I cooked them much too long and the chops were tough and the sliced potatoes turned out like chips. I think it was a save though. We had cottage cheese and applesauce on the side. You can't mess that up much can you?...but there's always tomorrow.
