Capsicum is 15,000,000 Scoville units when pure, with it being between 2,000,000 to 5,000,000 in majority of pepper sprays. If you are a big jalapeno pepper eater, you eat them at just 5,000 Scoville units, so imagine what it would be like to ingest pepper spray.
When pepper spray is used on an attacker, it inflames mucous membranes such as the personÂ’s nose, eyes, throat and lungs. This causes the attacker to instantly close their eyes and they could temporarily loose their sight. They also may encounter breathing problems from the pepper spray being so pungent. These effects can last 30 to 40 minutes or even longer depending on how much the strength is. This is the best self-defense weapon because once the attacker is incapacitated, you can quickly flee. You do not have to worry about causing permanent damage to someone. The effects are temporary.
Once you have purchased pepper spray, practice with it. This way if you are faced with the situation of having to use it, you will be prepared. Aim it away from your face and arms. Practice aiming so that if need be, you will know how to aim at the attackerÂ’s face. Remember that if you need to use it, try to aim quick and back away so that the spray doesnÂ’t hit you. If you do get some on you it may burn. Water will not help, so use milk or sour cream to help ease the sensation. If you get some spray in your eyes, blink as much as possible. The effects should ease 30 to 40 minutes afterwards, depending on how much you came in contact with.

In Canada is it legal to own pepper spray or mace for self defense purposes?
Or more specifically Saskatchewan? And if so is there any risks of criminal charges if you do use it?
As far as I know still it's illegal to carry pepper spray intended to be used against people (silly law but that's how it is right now).
BUT many people go around the law because it's legal to own and carry Dog or Bear Mace (you can't admit you plan to use it on people)... still you would need to prove legitimate self-defense situation, you can't go around "dog/bear macing" people just because you over reacted.

Only Peace Officers, and individuals/corporations who have special government permits may legally carry or possess pepper spray. Any similar canister with the labels reading "dog spray" and/or "bear spray" is regulated under the Pest Control Products Act - while legal to be carried by anyone, it is against the law if its use causes 'a risk of imminent death or serious bodily harm to another person' or harming the environment and carries a penalty up to a fine of $500,000 and jail time of maximum 3 years[28]. Of course, the legality of using spray intended for animal deterent on a person would be determined in court on a case-by-case basis."
